Oh 100% me too! I like everything to be exact when baking: weight, times, temperatures… so with caramel when they say, ‘it’s ready when it turns a deep caramel colour’ it scares the bejeezus out of me because then I just question if I know what caramel looks like!
That video recipe is a great one to follow along - Sally cooks hers for 20 mins but I found about 17 mins in the lowest heat setting worked best for me.
