Mark you are amazing, I love your post, commitment to the process and the outcome. This is not something I readily declare, but I’m a bit of an expert on croissants, eating not making. Generally won’t bother buying if they aren’t of a high standard, but your croissants would have me lining up for a taste. Good for you Mark, very impressive.
They're only going to get better with practice too 🥐 I've never tried to laminate at home, hats off to you for going to all the effort, I'm too impatient to wait haha!
Ah yes, the butter everywhere does mean it's too warm. It running out while baking is also because regular butter differs a bit from lamination butter bakeries can buy so that's tricky without the correct butter.
This was a fun read! Your croissants look beautiful. My brother would make croissants once a year for Christmas dinner. He made them so tender and delicious. I'm glad to see you attempted them and had fun doing it. I am an avid follower of GTBBO and even get emotional when someone loses. There are days I would like to attempt their recipes but I am not that patient with most of them.
